1/2 Cup (1 stick) butter, softened
1 Cup sugar
2 eggs, beaten
2 Cups flour
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
2 Tbsp milk
2 overly ripe bananas, smashed
1/2 Cup chocolate chips
Preheat oven to 325 degrees Fahrenheit. Mix all ingredients together in a large bowl. Pour into a greased glass or metal 9″ x 5″ loaf pan. Bake for 30 minutes. Reduce oven temperature to 300 degrees Fahrenheit, and bake for another 45 minutes. Check to be sure it is done by sticking a toothpick in the center of the loaf, and be sure it comes out clean (but don’t let the gooeyness of the melted chocolate chips fool you)!
This is one of my husband’s absolute favorite recipes!
The original calls for 1/2 Cup of nuts (your choice) chopped, but he prefers the chocolate chips. I mean, who doesn’t prefer chocolate over anything really? Also, I mix everything together in my Kitchen Aid stand mixer, but do be cautious that the butter is soft enough to get mixed in well. Otherwise your batter will have lots of clumps of butter in it.
This recipe is SO easy! I love making it on lazy weekend mornings because it requires little effort, barely any mess to clean up, and you have a yummy bread loaf you can eat on all week. Plus, you just can’t beat the smell of fresh baked bread in your home!
